Cucumber Salad with Red Onion & Chili Crisp Dressing

This one is fun for the kids and delicious for everyone.

Ingredients

  • Salad
    • 2 English Cucumbers
    • 1 small Red Onion
    •  ¼ cup of Toasted Sesame Seeds
    • 2 tbs Salt to drain Cucumbers
  • Dressing
    • 3 tbs Sesame Oil
    • 8 tbs Rice Vinegar
    • 1 ½ tsp Chili Crisp

Preparation

  • Use a rolling pin (I use my French pin) and a cutting board to smash  the unpeeled Cucumbers.  This can get a little messy as some small pieces of the inside of the cucumber fly around.  Keep turning the cucumber as you smash it so that a new spot breaks with each hit.
  • Use your fingers to break the pieces of Cucumber into bite-sized pieces.  The skin should snap and break when you bend it.
  • Put the pieces of Cucumber in a colander and sprinkle with Salt and toss the Cucumber to distribute the Salt evenly.  Put colander in another bowl and let Cucumber drain for 15 minutes or so. (This process takes some of the water out of the Cucumber.)
  • Slice Red Onion into very thin slices.
  • Dressing (make Dressing while Cucumber pieces drain)
    1. Mix Sesame Oil, Rice Vinegar, and Chili Crisp together.
  • Assemble Salad
    1. Separate Red Onion slices.
    2. Shake colander repeatedly to remove water and Salt from Cucumber pieces.
    3. Mix Cucumber pieces, Red Onion slices, and Sesame Seeds in a salad bowl.
    4. Dress Salad to taste.
