Zucchini Fries with Chili Crisp & Spicy Catsup Dunk

What’s not to like about a Zucchini Stick, especially a baked one? Then dunk it in a mix of Chili Crisp and Spicy Catsup and (poof!) all that’s left are smiles.

Ingredients

For Zucchini Fries

  • 4 medium Zucchini
  • 2 cups flavored Breadcrumbs
  • ½ cup freshly grated Parmeggiano-Reggiano Cheese
  • ½-¾ cup neutral Oil (like peanut, sunflower, avocado)
  • Neutral oil spray (Vegetable Oil Pam or Chosen Avocado Oil Spray)

For Chili Crisp & Spicy Catsup Dunk

  • 4 oz Spicy Catsup
  • 2 oz Chili Crisp

Preparation

For Zucchini Fries

  1. Trim ends off Zucchini and cut each one lengthwise into 6 long Sticks
  2. Place Sticks in a colander and lightly sprinkle with salt (this will remove some of the water from the Zucchini); leave for 30 minutes
  3. Preheat oven to 400 degrees
  4. Shake colander gently to remove water, then dry Sticks on paper towels
  5. Line cooking sheet with parchment paper
  6. Mix Breadcrumbs and Cheese and put in large shallow bowl
  7. Put Oil in shallow bowl or plate
  8. Quickly dip 1 Stick in the Oil and let excess drip back into bowl, then move to bowl with Breadcrumbs and coat each side, then place on parchment-lined cooking sheet
  9. When done place sheet in 400 degree oven for 20-25 minutes and let cool on pan
